From the outside, the butchery at Greenwell Point is a small building on the high street with striking, bright blue tiles. Inside, it houses 2 huge personalities with a serious passion for food, local ingredients and a dedication to serving the finest regional produce to their community.
Recently re-branded as 'South Coast Butcher's Pantry', owner Bryce and his assistant Isaac, are serving more than just meat. They now have a
curated selection of local and organic produce including fresh vegetables. Shelves are stocked with local honey and condiments, pastured eggs, milk and even dried edible flowers from regional boutique producers such as Swamp Baby Organic Farm.
Bryce, who grew up in Cambewarra, completed his apprenticeship in the shop itself, before taking over the business in 2010. Isaac, a 4th generation oyster farmer turned expert butcher, has a zeal for experimenting with flavour combinations such as noisette of lamb stuffed with locally grown spinach, bacon and cheese.
Locals are queuing out the door to get a taste of their smoked ham off the bone, hand-made sausages, rissoles and crumbed chicken; packed carefully in environmentally friendly brown paper bags.
Hidden at the back of the store is an authentic vintage smoker. It is here that the duo smoke their own chickens, pepperoni, cabanossi and ham, using hardwood chips and a traditional recipe. This technique secured them 1st prize in the 2019 AMIC NSW State Final and enables them to supply artisan smoked products to deli's and shops in the Shoalhaven.
Both men are hugely proud of the business and are motivated by the loyalty and feedback they are receiving from their customers. They are advocates for the best locally produced meat and produce the Shoalhaven has to offer.
Tragically, they lost their friend Jack to a car accident in 2019. He was an enormous part of the business and helped train Isaac, but they like to think he would be proud of what they have achieved. Spending time with them both, it's hard not to agree.
